The Pitco Twin Basket is a direct replacement two-compartment fry basket for Pitco commercial deep fryers, designed to allow two different products to be fried simultaneously in the same vat without cross-contamination. The divider separating the two compartments is welded to the outer frame to maintain a fixed separation under the weight of food loads and repeated immersion in high-temperature cooking oil. Using the correct twin basket ensures the divider alignment, overall vat fit, and handle geometry are compatible with the specific Pitco fryer models for which it was designed.
Over time, the welded divider, mesh, and outer frame of a twin basket are subject to structural fatigue from heavy loading, thermal stress, and the mechanical impact of being dropped into the vat during busy service periods, leading to weld failures, divider shifting, or frame distortion. A compromised twin basket can allow product to migrate between compartments, reducing the value of simultaneous multi-product frying, and a structurally weakened basket can create a spill hazard when lifted under load.
