The Vulcan Hart 00-913102-00444 is an OEM thermostat control and gas valve combo assembly for Vulcan Hart gas ranges and griddles. This type of combination assembly integrates two functions into a single unit: a gas valve that controls the flow of gas to the burner, and a temperature-sensing thermostat with a capillary tube that opens and closes the valve based on the cooking surface temperature. As the surface temperature rises to setpoint, the thermostat closes the valve to reduce gas flow; as it drops, the valve reopens to maintain temperature. The 550°F rating represents the upper temperature limit of the thermostat's sensing range, making this unit appropriate for high-temperature griddle and range applications.

Common failure symptoms include the cooking surface failing to reach setpoint temperature, the burner cycling off prematurely or not cycling at all, erratic or inconsistent surface temperatures, or the unit failing to light because the thermostat is not opening the gas valve.
